Turkey Frittatta

Preheat oven to 450º. In a large non-stick skillet over medium heat sauté for about 3 minutes:
   1 tablespoon olive oil
   1/2 small onion or 1 medium shallot, finely chopped
   1/2 red bell pepper, diced

Stir in and continue to cook until golden brown:
   1 cup leftover boiled potatoes, diced (about 2 medium)

Add and toss to mix through:
   1/2 cup diced HoneyBaked Smoked or Oven-Roasted Turkey

In a medium bowl whisk together:
   6 eggs, lightly beaten
   1/4 cup cream
   Salt and pepper to taste
   2 tablespoons chopped basil (or 1/2 teaspoon dried thyme)

Pour over potato and turkey mixture in skillet and top with:
   1/2 cup grated smoked Gouda or Monterey jack cheese

Put skillet in oven and cook for 3-5 minutes or until the fritata puffs up and is nicely browned.

Slice in quarters and serve with:
   Sliced avocados for garnish
   A dollop of sour cream.
