Stuffed Artichokes

Preheat the oven to 350º
In microwave cook approximately 15 to 20 minutes:
   4 artichokes, trimmed and base cut so they will sit flat

Remove the chokes by removing the center leaves and scraping with a large spoon. Place them in a square baking pan.

While the chokes are cooking blend together in a mixing bowl:
   1 cup (8 ounces) whole milk ricotta cheese
   1 egg, lightly beaten
   1/4 cup grated Parmesan cheese
   Salt and freshly ground black pepper
   1 cup HoneyBaked Ham cut in strips
   2 green onions minced
   Salt and pepper to taste

Divide and stuff the chokes with the mixture and sprinkle the tops with:
   1/4 cup dry bread crumbs
   2 tablespoons melted butter

Add some water to the bottom of the pan and bake for 30 minutes, or until tops are golden brown.
