Preheat oven to 325º
Slice & cut into 1" cubes
1 10 oz. French or Sourdough baguette (Aprox. 5 cups):
Spray with:
Olive oil style cooking spray
Spread in a single layer on a cookie sheet and bake, stirring occasionally until
lightly browned, but still soft inside. (About 15 minutes) Let cool, then add to a
bowl with:
1/2 pound cubed fontina cheese
2 cups halved cherry tomatoes
1 rib celery, sliced
1 small red onion, very thinly sliced into strips
1/4 cup minced fresh parsley
Meanwhile in a medium bowl, whisk together:
1/4 cup balsamic vinegar (or a 50/50 mix of red wine and balsamic vinegar)
1 clove garlic, minced
3/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
Then add and continue to whisk in a steady stream:
1/2 cup olive oil
Pour over Bread mixture and toss.
Then add and toss 1 more time:
1 bag of Pre-cut Romaine or Caesar style salad greens
1 cup julienned HoneyBaked Ham
