Smoked Turkey and Country Slaw Sandwiches

Pre-heat the broiler and toast (About 3 minutes total turning once):
   8 slices thickly sliced sourdough, country style or rye bread

Remove and set aside.

In a medium saucepan heat over medium heat:
   2 tablespoons wine vinegar

Add and toss to coat and starting to wilt:
   1/2 a small head red cabbage, shredded (about 1 quart)

Transfer the cabbage to a medium bowl and add:
   2 carrots, grated
   2 green onions diced with some of the green part
   1/2 cup mayonnaise
   1/4 teaspoon ground cumin
   1/4 teaspoon paprika
   1/4 teaspoon salt
   1/4 teaspoon fresh-ground black pepper

To assemble sandwiches, divide among 4 of the bread slices:
   8 slices HoneyBaked smoked turkey,
   2 large sliced Tomatoes
   1/4 of the slaw

Top with the remaining toast and serve.

Makes 4 Servings.
